Ingredients

Cake:

  • 6-7 medium apples Granny Smith, Honeycrisp, or your favorite variety
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 cup unsweetened almond milk or other plant-based milk
  • 1/4 cup dairy-free yogurt
  • 1/4 cup melted coconut oil or vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon optional
  • Powdered sugar for dusting optional

Instructions

Prepare the Apples:

  • Preheat your oven to 350°F (175°C).
  • Grease and line an 8-inch round cake pan with parchment paper.
  • Peel the apples, then use a mandolin to slice them very thinly (about 1/8-inch thick). Set aside.

Prepare the Batter:

  • In a large bowl, whisk together the all-purpose flour, almond flour, granulated sugar, baking powder, and salt.
  • In another bowl, mix the unsweetened almond milk, dairy-free yogurt, melted coconut oil, and vanilla extract until smooth.
  • Add the wet ingredients to the dry ingredients, mixing until just combined. The batter should be smooth and slightly thick.

Combine Apples and Batter:

  • Add the thinly sliced apples to the batter, gently folding them in until all the apple slices are well-coated with batter.

Assemble the Cake:

  • Pour the apple and batter mixture into the prepared cake pan, spreading it out evenly and pressing down to ensure the apples are well-packed.
  • Sprinkle the top with ground cinnamon, if using.

Bake the Cake:

  • Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 20 minutes before transferring to a wire rack to cool completely.

Serve:

  • Dust the top of the cake with powdered sugar before serving, if desired.
