Berry Filling:

  • 2 cups frozen mixed berries
  • 2 tbsp raspberry jam (or any other flavor)
  • 1/4 cup coconut sugar (or cane, brown, or monk fruit sweetener)

Crisp:

  • 1 cup oat flour
  • 2/3 cup old-fashioned oats
  • 2 tbsp ground flax
  • 1/4 cup extra virgin olive oil (or coconut oil)
  • 1/4 cup maple syrup


Instructions

  1. Preheat your oven to 350°F.
  2. Place the frozen berries directly into your baking dish (such as a pie dish or 8×8-inch pan).
  3. Add the jam and coconut sugar to the berries, mixing until each berry is coated. Set aside.
  4. In a medium mixing bowl, combine oat flour, oats, ground flax, olive oil, and maple syrup, stirring until a thick crumble forms.
  5. Using your hands, crumble the mixture over the berries until they are evenly coated.
  6. Bake for 30 minutes or until golden brown.
  7. Allow it to cool for 10 minutes before serving. Enjoy warm with a dollop of vanilla ice cream or coconut whip cream!
