Vegan Berry Crisp

Ingredients
Berry Filling:
- 2 cups frozen mixed berries
- 2 tbsp raspberry jam or any other flavor
- 1/4 cup coconut sugar or cane, brown, or monk fruit sweetener
Crisp:
- 1 cup oat flour
- 2/3 cup old-fashioned oats
- 2 tbsp ground flax
- 1/4 cup extra virgin olive oil or coconut oil
- 1/4 cup maple syrup
Instructions
- Preheat your oven to 350°F.
- Place the frozen berries directly into your baking dish (such as a pie dish or 8×8-inch pan).
- Add the jam and coconut sugar to the berries, mixing until each berry is coated. Set aside.
- In a medium mixing bowl, combine oat flour, oats, ground flax, olive oil, and maple syrup, stirring until a thick crumble forms.
- Using your hands, crumble the mixture over the berries until they are evenly coated.
- Bake for 30 minutes or until golden brown.
- Allow it to cool for 10 minutes before serving. Enjoy warm with a dollop of vanilla ice cream or coconut whip cream!
