Vegan Banana Brownies

Ingredients
- – 3 spotty bananas about 1.5-2 cups mashed
- – 1/2 cup almond butter or any other nut or seed butter
- – 1 tsp vanilla extract
- – 1/2 cup pure maple syrup or substitute coconut sugar, brown sugar, or cane sugar
- – 1/3 cup cacao powder
- – 1 tsp baking soda
- – 3/4 cup oat flour or substitute all-purpose or a 1:1 gluten-free flour blend
- – 1/2 tsp salt
- – 1/2 cup chocolate chips + more for topping
Instructions
- Preheat the oven to 375°F and prepare a 9×9 or 8×8 baking dish with parchment paper.
- In a medium bowl, mash the bananas until smooth.
- Add almond butter, maple syrup, and vanilla extract. Whisk until well combined.
- Add oat flour, cacao powder, baking soda, and salt. Mix with a rubber spatula until a thick batter forms.
- Fold in the chocolate chips, then spread the batter evenly in the prepared dish. Top with extra chocolate chips if desired.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let cool completely before slicing. Enjoy warm with Cool Whip, dairy-free caramel, and diced hazelnuts.
Notes
- Use ripe or overripe bananas for a naturally sweeter brownie.
- Mix wet ingredients fully before adding the dry ones.
- Brownies are done when a toothpick inserted in the center comes out clean.
