Dry Ingredients

  • 1.5 cups white whole wheat flour
  • 1/2 cup rolled oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 cup mixed berries (fresh or frozen)

Wet Ingredients

  • 1/2 cup unsweetened applesauce or mashed banana (for a sweeter cake)
  • 2 large eggs
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1/2 cup plain (unsweetened almond milk)
  • 1/3 cup maple syrup or honey

Toppings

  • Maple syrup/honey
  • Nut butter


Instructions

  1. Preheat your oven to 350ºF and grease an 8×8-inch square baking dish with nonstick cooking spray.
  2. In a large bowl, combine all dry ingredients except for the berries and whisk them together. Then, add the wet ingredients into the dry mixture and stir well with a wooden spoon. Finally, gently fold in the berries until evenly distributed.
  3. Transfer the batter into the prepared baking dish and sprinkle additional berries and oats on top, if desired.
  4. Bake at 350ºF for approximately 40 minutes or until the center is fully cooked.
  5. Allow the breakfast cake to cool for at least 15 minutes before slicing and serving.
