- 1 Trader Joe’s scallion pancake
- 2 eggs
- Salt & pepper to taste
- Parmesan cheese
- Scallions
- Trader Joe’s chili crisp (or homemade version!)
Instructions
- Lightly spray a pan over medium heat. Add the frozen scallion pancake and let it cook for 1-2 minutes until golden brown.
- Flip the pancake to the other side and quickly remove it from the pan.
- In a bowl, whisk together the eggs with salt and pepper.
- Spray the pan again and pour in the egg mixture.
- Place the cooked scallion pancake on top of the eggs, golden brown side facing down.
- Once the eggs have set, flip the pancake to the other side and add your desired toppings.
- Let it cook for another 1-2 minutes, then slide it onto a plate.
- Allow it to cool for a bit, then cut it in half and dig in! Enjoy your delicious meal!
