  • 2 ounces cream cheese (softened)
  • 1/4 cup confectioners’ sugar
  • 1 loaf brioche (sliced into 1 1/2-inch-thick slices (day-old preferred))
  • 4 large eggs
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 1/4 cup granulated sugar
  • 2 teaspoons instant espresso
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons or more unsalted butter
  • Unsweetened cocoa powder and maple syrup (for serving)


Instructions

  1. Step 1: Mix mascarpone, cream cheese, and confectioners’ sugar until smooth, then transfer to a piping bag.
  2. Step 2: Slice a 2-inch-wide slit into the bottom of each bread slice and pipe in the filling.
  3. Step 3: Whisk eggs, milk, cream, granulated sugar, espresso, and vanilla in a large bowl. Dip the stuffed bread into the egg mixture, letting it soak for about 10 seconds on each side.
  4. Step 4: Melt butter in a skillet over medium heat and cook the bread until golden brown, about 3 minutes per side.
