Tiramisu Cinnamon Rolls
Ingredients
Dough:
- 480 ml dairy-free milk almond, soy, or oat
- 115 g dairy-free butter melted
- 50 g sugar
- 1 packet active dry yeast 2¼ tsp
- 650 g bread flour
- 2 tsp ground coffee
- 1 tsp salt
- 1 tsp baking powder
Filling:
- 170 g dairy-free butter softened
- 150 g light brown sugar
- 2 tbsp ground cinnamon
- 2 tsp ground coffee
Frosting:
- 150 g dairy-free cream cheese
- 150 g thick dairy-free cream double cream or coconut cream
- 100 g icing sugar
- Cocoa powder for dusting
Instructions
Prepare the Dough:
- In a saucepan, heat the dairy-free milk until warm (about 110°F or 43°C). Do not boil.
- In a large bowl, combine the warm milk, melted dairy-free butter, and sugar. Sprinkle the active dry yeast over the mixture and let it sit for 5-10 minutes until frothy.
- In another bowl, mix the bread flour, ground coffee, salt, and baking powder.
- Gradually add the dry ingredients to the wet mixture, mixing with a wooden spoon until a dough forms.
- Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a towel or plastic wrap, and let it rise in a warm place for about 1 hour, or until doubled in size.
Prepare the Filling:
- In a small bowl, mix the softened dairy-free butter, light brown sugar, ground cinnamon, and ground coffee until well combined.
Assemble the Rolls:
- Preheat your oven to 350°F (175°C).
- Punch down the risen dough and roll it out on a floured surface into a large rectangle, about ¼-inch thick.
- Spread the coffee cinnamon filling evenly over the dough.
- Starting from the long edge, tightly roll up the dough into a log.
- Cut the log into 12 equal pieces and place them in a greased 9×13-inch baking dish, cut side up.
- Cover the dish with a towel or plastic wrap and let the rolls rise again for about 30-45 minutes, or until puffy.
Bake the Rolls:
- Bake the rolls for 25-30 minutes, or until golden brown.
- Allow the rolls to cool slightly in the pan while you prepare the frosting.
Prepare the Frosting:
- In a large bowl, beat the dairy-free cream cheese until smooth.
- Add the thick dairy-free cream and icing sugar, mixing until light and fluffy.
Serve:
- Spread the creamy frosting over the warm rolls.
- Dust with cocoa powder before serving.
