**For the Greek Salad:**

  • 3 cups of shredded romaine lettuce
  • ½ medium red onion thinly sliced
  • ½ cup Kalamata olives
  • 2 large tomatoes about 2 cups, chopped
  • 1 large English cucumber about 1 1/2 cups, chopped
  • 1/2 cup feta cheese crumbles
  • 1 cup pita chips

**For the Dressing:**

  • 1/4 cup extra virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • 1 tablespoon white wine or red wine vinegar
  • Juice of 1 medium lime
  • 1/2 teaspoon salt or to taste
  • 1/2 teaspoon black pepper or to taste


  • Start by prepping your salad ingredients! Slice the lettuce thinly, dice the tomatoes and cucumbers into small cubes, halve the Kalamata olives, and slice the red onion.
  • Now, let’s make the salad dressing. In a mason jar, combine olive oil, oregano, basil, garlic powder, vinegar, lime juice, salt, and pepper. Cover the jar and shake well.
  • Grab a large bowl and place the lettuce in it.
  • Layer the tomatoes, cucumbers, Kalamata olives, red onions, feta, and pita chips on top of the lettuce.
  • Drizzle as much or as little dressing as you like over the salad.
  • Toss everything together using large salad spoons or tongs.
  • Serve immediately and enjoy your fresh, flavorful salad!
