Ingredients
  

  • 6 Eggroll wrappers
  • 1 cup leftover shredded turkey
  • 1 cup leftover mashed potatoes
  • 1 cup leftover cranberries
  • 1 cup leftover stuffing
  • Vegetable oil
  • 1/3 cup leftover gravy for dipping

Instructions
 

  • Lay an egg roll wrapper on a clean surface in a diamond shape. Spread a thin layer of cranberries, followed by a couple of spoonfuls of mashed potatoes, stuffing, and turkey.
  • Fold up the bottom half and tightly fold in the sides. Gently roll it up, then seal the fold with a couple of drops of water. Repeat with the remaining leftovers.
  • In a large skillet over medium heat, heat enough vegetable oil (about 1 inch up the side of the pan) until it starts to bubble. Add the egg rolls and fry until golden, about 1 minute per side. Transfer them to a paper towel-lined plate to cool slightly.
