Ingredients

  • 2 salmon fillets (~6 oz each)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1/2 tsp cayenne pepper (or less, to taste)
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lemon
  • Fresh parsley, finely chopped (for garnish)
  • Lemon wedges or slices, for serving


Instructions

  1. Heat the oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper.
  2. In a small bowl whisk together the olive oil, garlic powder, onion powder, paprika, oregano, cayenne, salt and pepper until you have a loose paste.
  3. Pat the salmon dry with paper towels and lay the fillets skin-side down on the prepared sheet.
  4. Brush or rub the spice mixture all over the top and sides of each fillet, making sure the seasoning covers the surface evenly.
  5. Drizzle the lemon juice over the seasoned fish for a bright, tangy finish.
  6. Slide the pan into the oven and bake for 12–15 minutes, depending on thickness, until the flesh flakes easily with a fork.
  7. Take the salmon out of the oven and let it rest 2–3 minutes so the juices redistribute.
  8. Sprinkle with chopped parsley, serve with lemon slices, and enjoy.

Notes

Quick tip: If you want a slightly crisp top, pop the tray under the broiler for 30–60 seconds at the end — watch it closely so it doesn’t burn.
