Strawberry Glazed Cake

Inspired by a strawberry glazed doughnut, this cake has a moist vanilla sponge filled with sweet strawberry jam and covered with a crispy strawberry glaze. It has everything you love about a doughnut, but in a soft, gooey cake form!

Strawberry Glazed Cake

Ingredients

Cake:

  • cups all-purpose flour
  • 1 cup granulated sugar
  • tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup unsweetened applesauce
  • ½ cup plant-based milk almond, soy, or oat
  • cup melted coconut oil or vegetable oil
  • 2 tsp vanilla extract
  • 1 tbsp apple cider vinegar or lemon juice

Strawberry Glaze:

  • 1 cup fresh strawberries hulled and chopped
  • ½ cup powdered sugar
  • 1 tbsp lemon juice
  • 1-2 tbsp water as needed
  • ½ tsp vanilla extract optional

Optional Garnish:

  • Fresh strawberries sliced
  • Mint leaves

Instructions

Prepare the Cake:

  • Preheat your oven to 350°F (175°C).
  • Grease and line an 8-inch round cake pan or 9×9-inch square pan with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix the applesauce, plant-based milk, melted coconut oil, vanilla extract, and apple cider vinegar or lemon juice.
  • Add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
  • Pour the batter into the prepared pan and spread it evenly.

Bake:

  • Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Prepare the Strawberry Glaze:

  • While the cake is cooling, make the glaze.
  • In a blender or food processor, puree the chopped strawberries until smooth.
  • In a bowl, combine the strawberry puree, powdered sugar, and lemon juice. Stir until smooth.
  • Add water, 1 tablespoon at a time, until the glaze reaches a pourable consistency. Optionally, add vanilla extract for extra flavor.

Glaze the Cake:

  • Once the cake is completely cooled, place it on a serving plate or cake stand.
  • Pour the strawberry glaze over the top of the cake, allowing it to drip down the sides.
  • Use a spatula to spread the glaze evenly if needed.

Garnish (Optional):

  • Decorate the cake with fresh strawberry slices and mint leaves.

Serve:

  • Let the glaze set for about 15 minutes before slicing.
  • Serve at room temperature or chilled. Enjoy!

Notes

  • Applesauce: Acts as a substitute for eggs, providing moisture and binding the ingredients.
  • Coconut Oil: Adds richness and helps with the cake’s moisture. You can substitute with vegetable oil if preferred.
  • Strawberries: Fresh strawberries are recommended for the glaze, but frozen can be used if thawed and drained.
  • Powdered Sugar: Adjust the amount to your desired sweetness for the glaze.
