**For the cookies:**

  • 1 cup room temperature butter (salted or unsalted)
  • 1 cup granulated sugar
  • 2 eggs at room temperature
  • 2 tsp vanilla extract
  • ½ tsp almond extract
  • 3 cups all-purpose flour
  • 1 tbsp cornstarch
  • 2 tsp baking powder
  • ½ tsp salt

**For the frosting:**

  • ½ cup room temperature butter (salted or unsalted)
  • 3 cups powdered sugar
  • ½ tsp vanilla extract
  • ¼ tsp almond extract
  • 24 tbsp heavy cream or milk at room temperature


Instructions

**For the cookies:**

  1. Preheat your oven to 350°F.
  2. In a stand mixer, cream the butter and granulated sugar until light and fluffy (3-5 minutes).
  3. Add vanilla, almond extract, and eggs. Mix on low until just incorporated.
  4. While mixing on low, slowly add in the flour, cornstarch, baking powder, and salt. Mix until just incorporated; don’t overmix.
  5. Use a large cookie scoop (about 3 tablespoons of dough per cookie) to make dough balls. Space them 2-3 inches apart on a cookie sheet.
  6. Use a round glass to press the bottom onto the cookie dough to flatten.
  7. Bake for 10-11 minutes or until the edges are just set. Let them cool on the pan for 3 minutes before transferring to a cookie rack to cool completely.

**For the frosting:**

  1. While the cookies are cooling, make the frosting. In a stand mixer, beat the butter, powdered sugar, vanilla, and almond extract until smooth.
  2. Add in heavy cream 1 tablespoon at a time until it reaches the desired consistency. Add food coloring if desired.

**To decorate:**

  1. Spread about 2 tablespoons of frosting on the cooled cookies and add sprinkles.
