  • *For the cookie dough:*
  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 2 eggs (at room temperature)
  • 2 tsp vanilla extract
  • ½ tsp almond extract
  • 3 cups all-purpose flour
  • 1 tbsp cornstarch
  • 2 tsp baking powder
  • ½ tsp salt

*For the frosting:*

  • ½ cup unsalted butter (softened)
  • 3 cups powdered sugar
  • ½ tsp vanilla extract
  • ¼ tsp almond extract
  • 24 tbsp whole milk (at room temperature)
  • ¼ tsp salt
  • Optional: food coloring
  • Sprinkles


Instructions

*For the cookie dough:*

  1. Preheat your oven to 350°F.
  2. In a stand mixer, cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
  3. Add in the vanilla extract, almond extract, and room temperature eggs. Mix on low until just combined.
  4. While the mixer is on low, gradually add in the flour, cornstarch, baking powder, and salt. Mix until just incorporated; avoid overmixing.
  5. Line a cookie sheet with parchment paper. Use a large cookie scoop to make dough balls (about 3 tablespoons each) and place them 2-3 inches apart.
  6. Flatten the dough balls with the bottom of a round glass. Bake for 10-11 minutes or until the edges are set. Allow to cool on the pan for 3 minutes before transferring to a cooling rack.

*For the frosting:*

  1. While the cookies cool, prepare the frosting. In a stand mixer, beat together the softened butter, powdered sugar, vanilla extract, and almond extract until smooth.
  2. Gradually add in the whole milk, one tablespoon at a time, until you reach the desired consistency.
  3. If desired, add food coloring to the frosting.

*To decorate:*

  1. Spread about 2 tablespoons of frosting on each cooled cookie and top with sprinkles.
  2. Enjoy your homemade Lofthouse cookies!
