Snickers Ice Cream Date Bark

Ingredients

  • 12 large medjool dates (pitted (Make sure they’re nice and soft!))
  • 1/2 cup peanut butter
  • 3/4 cup vanilla ice cream (softened)
  • 1/2 cup salted peanuts
  • 1 1/2 cups chocolate chips
  • 1 teaspoon coconut oil
  • Flaky salt


Instructions

  1. Open up the dates, remove the pits, and line them up close together on a baking sheet lined with parchment paper. Use the bottom of a cup sprayed with oil or cooking spray to gently press the dates down and flatten them.
  2. Now, let’s get that chocolate melted! Put the chocolate chips and coconut oil in a bowl, then microwave them in 2-3 30-second bursts until they’re completely melted and smooth. Set it aside for now.
  3. Spread a layer of peanut butter on top of the flattened dates.
  4. Next, add spoonfuls of softened vanilla ice cream and sprinkle the salted peanuts over the top.
  5. Finally, pour the melted chocolate over everything and sprinkle some flaky salt on top.
  6. Pop it in the freezer for at least 1 hour until the chocolate sets and the ice cream hardens again.
  7. Once it’s all set, cut it into pieces and indulge in this delightful treat!
