These delightful date bites use only three ingredients and almost no fuss. Ripe Medjool dates provide natural caramel sweetness, creamy peanut (or alternative) butter adds richness, and melted chocolate gives each bite a luxurious finish. They’re naturally vegan, can be dairy-free, and contain no added refined sugar — a simple, wholesome treat with a sprinkle of flaky salt to balance the flavors.

- 10 large Medjool dates
- ¼ cup unsweetened peanut butter (or almond/sunflower seed butter)
- ½ cup chocolate chips, melted (use dairy-free if needed)
- Flaky sea salt, for finishing (optional)
Instructions
- Remove pits: Slice each date open lengthwise and take out the pit. Arrange the pitted dates on a tray lined with parchment.
- Flatten: Gently press each date down with the base of a glass or your palm until it’s flattened to the thickness you like.
- Add the filling: Spoon or spread a dollop of nut butter over the center of every smashed date.
- Coat with chocolate: Spoon the warmed, melted chocolate over each nut-butter topped date, or lightly drizzle it on.
- Chill to set: Place the tray in the refrigerator or freezer until the chocolate firms up.
- Finish & serve: Scatter a pinch of flaky sea salt on top (if using) and enjoy once set.
Notes
- If your nut butter is runny, chill briefly before filling to keep it from oozing.
- Store leftovers in an airtight container in the fridge for up to a week, or freeze for longer storage.
