Ingredients

  • 1/2 cup Rolled Oats (for oat flour or 1/3 cup + 1 tablespoon pre-made oat flour)
  • 2 tablespoons Brown Sugar (or coconut sugar if you prefer)
  • 1/4 teaspoon Baking Powder
  • 1/4 teaspoon Pumpkin Pie Spice
  • 2 tablespoons Pumpkin Purée
  • 1 tablespoon Cold Butter (cubed)
  • 23 tablespoons Milk of choice
  • 2 tablespoons Chocolate Chips


Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. If you’re making oat flour from scratch, blend your rolled oats until they form a flour-like consistency.
  3. In a bowl, mix together the oat flour, cold butter, baking powder, pumpkin pie spice, pumpkin purée, and brown sugar until crumbly.
  4. Add in the milk gradually until a thick dough forms, then fold in the chocolate chips.
  5. Shape the dough into a round scone shape and place it on the prepared baking sheet.
  6. Sprinkle some brown sugar on top for an extra touch of sweetness.
  7. Bake for 18-20 minutes until golden brown.
  8. Let it cool for a bit, then dig in and enjoy your homemade pumpkin chocolate chip scone!
