Single Serving Pumpkin Chocolate Chip Scone

Ingredients

  • 1/2 cup Rolled Oats for oat flour or 1/3 cup + 1 tablespoon pre-made oat flour
  • 2 tablespoons Brown Sugar or coconut sugar if you prefer
  • 1/4 teaspoon Baking Powder
  • 1/4 teaspoon Pumpkin Pie Spice
  • 2 tablespoons Pumpkin Purée
  • 1 tablespoon Cold Butter cubed
  • 2-3 tablespoons Milk of choice
  • 2 tablespoons Chocolate Chips

Instructions

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.
  • If you’re making oat flour from scratch, blend your rolled oats until they form a flour-like consistency.
  • In a bowl, mix together the oat flour, cold butter, baking powder, pumpkin pie spice, pumpkin purée, and brown sugar until crumbly.
  • Add in the milk gradually until a thick dough forms, then fold in the chocolate chips.
  • Shape the dough into a round scone shape and place it on the prepared baking sheet.
  • Sprinkle some brown sugar on top for an extra touch of sweetness.
  • Bake for 18-20 minutes until golden brown.
  • Let it cool for a bit, then dig in and enjoy your homemade pumpkin chocolate chip scone!
