Ingredients

  • Pancake mix plus the ingredients listed on the box
  • 1 teaspoon pure vanilla extract
  • Butter for the pan
  • 6 strawberries with the stem side cut
  • Whipped topping
  • Powdered sugar for sprinkling
  • Maple syrup for serving

Instructions

  • In a big bowl, prepare the pancake mix following the instructions on the package. Stir in the vanilla for that extra flavor kick. To make pouring easier, transfer the batter into a clean squeeze bottle.
  • Melt some butter in a large nonstick skillet over medium heat. Squeeze small circles of batter into the pan and cook until bubbles start to form and pop on the surface, which takes about 1 minute. Flip them over and cook until they’re golden on the other side, about 1 more minute. Once done, transfer them to a plate and cover with foil to keep warm.
  • On a serving platter, stack three mini pancakes. Spread whipped topping on top of each stack, then place a strawberry on the very top. For the finishing touch, add a small dollop of whipped topping to the tip of each strawberry.
  • Sprinkle powdered sugar over the pancakes and serve them with maple syrup for dipping. Enjoy your festive breakfast treat!
