- Make the ricotta smooth
Add the ricotta to a medium bowl and beat it with a fork, whisk, or hand mixer until it becomes smooth and light. If you want a silkier texture, mix it briefly with a hand mixer on low speed. - Blend in the flavorings
Stir in the honey, vanilla, lemon zest if using, and a small pinch of sea salt. Mix until everything is evenly combined and the ricotta tastes lightly sweet and creamy. - Chill the mixture
Cover the bowl and place it in the refrigerator for 20 to 30 minutes. Chilling helps the mixture firm up so it is easier to shape. - Form the bites
Use a small scoop or spoon to portion the chilled ricotta into small mounds or oval-shaped quenelles. Place them carefully on a serving plate. - Add the pistachios
Scatter the chopped pistachios over each portion and press them in gently so they adhere. - Finish with honey
