Reindeer Cake Pops

Ingredients

  • 1/4 cup pure maple syrup
  • 1/4 cup creamy all-natural peanut butter
  • ½ tsp vanilla bean paste or vanilla extract
  • 1 cup almond flour
  • 1 cup vegan dark chocolate chips
  • 1/2 tbsp coconut oil for melting chocolate
  • 16 gluten-free pretzels
  • 16 candy eyes
  • 8 red candies for the nose

Instructions

  • In a bowl, mix peanut butter, maple syrup, and vanilla extract. Then, stir in almond flour.
  • Use a cookie scoop to form dough into balls. Place them on parchment paper and freeze while you melt the chocolate.
  • Melt chocolate with coconut oil in the microwave or using a double boiler.
  • Dip each ball in melted chocolate, then attach two pretzels for antlers, two candy eyes, and a red candy for the nose.
  • Place back on parchment paper and return to the freezer to set for about 20 minutes. Enjoy!

Notes

  • Thoroughly mix wet ingredients before adding almond flour.
  • Use a cookie scoop for uniformity.
  • Freeze balls while melting chocolate.
  • Consider melting chocolate with coconut oil for smoother consistency.
  • Chocolate can be melted in the microwave or on the stovetop using a double boiler.
