Pumpkin Tiramisu is like a cozy hug for your taste buds, perfect for fall. It’s a twist on a classic Italian treat, but with a pumpkin spice latte vibe that’s even better!

Ingredients
  

  • 1/2 cup of heavy cream
  • 16 ounces of mascarpone cheese make sure it’s at room temperature
  • 1 cup of pumpkin puree
  • 4 egg yolks
  • 1 teaspoon of pumpkin spice
  • 2/3 cup of white sugar
  • 1 teaspoon of vanilla extract
  • 1 1/2 cups of strongly brewed coffee
  • 2 to 3 tablespoons of brown sugar
  • 1 package of Lady Fingers

Instructions
 

**1. Prepare the mascarpone filling:**

  • – In a bowl, mix together the pumpkin puree, egg yolks, pumpkin spice, white sugar, and vanilla extract until it’s smooth.
  • – Then, add the heavy cream and mascarpone cheese. Use a whisk or a hand-held mixer to beat until it’s thick and fluffy.

**2. Brew the coffee:**

  • – Make some strong coffee and mix it with brown sugar until the sugar dissolves.

**3. Assemble the tiramisu:**

  • – Get a 9×13-inch pan or baking dish ready.
  • – Quickly dip both sides of each ladyfinger into the coffee (don’t let them get too soggy!).
  • – Arrange the soaked ladyfingers in a single layer on the bottom of the dish.
  • – Spread about half of the mascarpone filling on top of the ladyfingers.
  • – Add another layer of soaked ladyfingers on top of the filling.
  • – Finish by adding the rest of the mascarpone filling on top.
  • – Cover the dish with plastic wrap and chill it in the fridge for 3 to 4 hours (overnight is even better).

**4. Serve and enjoy:**

  • – Once it’s chilled, sprinkle some pumpkin pie spice on top, slice it up, and savor every bite!
