Pumpkin Cheesecake Jars

Ingredients
- 1 cup cottage cheese
- 1 cup plain Greek yogurt
- 1/4 cup maple syrup
- 2 tsp vanilla extract
- 1 tsp cinnamon
- 1/3 cup pumpkin puree
- 1/2 cup crushed graham crackers divided
- Whipped cream optional
Instructions
- In a food processor, combine cottage cheese, Greek yogurt, maple syrup, vanilla extract, cinnamon, and pumpkin puree. Blend until smooth and creamy.
- Crush graham crackers either in a plastic bag or using a blender.
- Assemble the cheesecake jars by layering graham cracker dust at the bottom, followed by the cheesecake filling, and finish with whipped cream and a sprinkle of cinnamon, if desired.
Notes
- Use a blender or food processor to achieve a smooth cheesecake filling.
- For best results, crush graham crackers into a fine dust using a blender.
- Experiment with layering additional graham cracker dust between the pumpkin cheesecake filling for added texture and flavor.
