Ingredients

  • 1 cup cottage cheese
  • 1 cup plain Greek yogurt
  • 1/4 cup maple syrup
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/3 cup pumpkin puree
  • 1/2 cup crushed graham crackers divided
  • Whipped cream optional

Instructions

  • In a food processor, combine cottage cheese, Greek yogurt, maple syrup, vanilla extract, cinnamon, and pumpkin puree. Blend until smooth and creamy.
  • Crush graham crackers either in a plastic bag or using a blender.
  • Assemble the cheesecake jars by layering graham cracker dust at the bottom, followed by the cheesecake filling, and finish with whipped cream and a sprinkle of cinnamon, if desired.

Notes

  • Use a blender or food processor to achieve a smooth cheesecake filling.
  • For best results, crush graham crackers into a fine dust using a blender.
  • Experiment with layering additional graham cracker dust between the pumpkin cheesecake filling for added texture and flavor.
