Pumpkin Bagels

Ingredients

  • 1 ¾ cups all-purpose flour
  • 2 tsp baking powder
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 2 tbsp chia seeds
  • ¼ cup ground flaxseed meal
  • ¼ tsp salt
  • 1 cup Greek yogurt
  • cup pumpkin puree
  • 2 tsp maple syrup
  • ¼ cup pumpkin seeds

Instructions

  • Combine dry ingredients in a large bowl: flour, baking powder, pumpkin pie spice, cinnamon, chia seeds, flaxseed meal, and salt.
  • In another bowl, mix Greek yogurt, pumpkin puree, and maple syrup until dough forms.
  • Flour your hands and surface. Knead dough for about 1 minute, then divide into four equal parts.
  • Roll each part into a ball and create a hole in the center, larger than desired, as they’ll rise during baking.
  • Brush with egg wash, sprinkle with pumpkin seeds, and air fry at 350°F for 12-15 mins or bake at 350°F for 20-25 mins.
  • Let cool, then slice and enjoy with cream cheese or pumpkin butter.

Notes

• Mix wet ingredients separately from dry for thorough blending.
• Add more flour if dough feels too sticky.
• Depending on air fryer size, cook bagels one at a time if needed.
