Inside their flaky, buttery layers, you’ll find a delightful apple pie filling, spiced with warmth and sweetness, and topped with a simple brown sugar cinnamon glaze. The best part? They’re incredibly easy to whip up!
Puff Pastry Apple Hand Pies with Cinnamon Brown Sugar Glaze

Ingredients
- 2 sheets 17.3 oz puff pastry, cut into 12 rectangles
- 1 egg yolk + 1 tsp water
**Apple Pie Filling:**
- 2 diced & peeled apples ~2 cups
- 2 tbsp butter
- 2 tbsp heavy cream
- 1 tbsp cornstarch
- 3/4 tsp vanilla extract
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/8 tsp cloves
- Pinch of salt
**Brown Sugar Cinnamon Glaze:**
- 1/2 cup powdered sugar sifted
- 2 tbsp brown sugar
- 3 tbsp heavy cream
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
Instructions
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- For the filling, melt butter in a small saucepan over medium heat. Whisk in cream, cornstarch, vanilla, brown sugar, cinnamon, nutmeg, cloves, and salt. Add in the apples, stirring well to coat. Cook on medium-low for 6-8 minutes until the apples are fork-tender. Let it cool.
- Place 6 puff pastry rectangles on a baking sheet. Divide the filling between the 6 rectangles. Cover with the remaining puff pastry sheets and use a fork to seal the edges. Cut two small slits in the top of each tart. Brush with the egg wash.
- Bake for 20-22 minutes or until golden brown. Let them cool, then whisk together all glaze ingredients and drizzle on top.
