- 1 pound chicken breast, cut into bite-size pieces
- 1 cup pineapple, cut into chunks
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup jasmine rice
- 2 cups chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon grated ginger
- Salt and pepper, to taste
- 1/4 cup sliced green onions
- 1 tablespoon sesame seeds
Instructions
- Warm the olive oil in a large skillet over medium heat. Add the chicken and cook until it is browned and cooked through, then transfer it to a plate.
- In the same skillet, cook the onion, garlic, and red bell pepper until they soften and become fragrant.
- Add the pineapple chunks and let them cook for about 2 minutes so they start to release their juices.
- Stir in the jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring the mixture to a boil, then lower the heat, cover, and simmer for 18 to 20 minutes, or until the rice is tender.
- Return the cooked chicken to the skillet and stir everything together until heated through and well combined.
