Description

This Pineapple Chicken and Rice is a sweet-and-savory skillet dinner made with juicy pineapple, tender chicken, fragrant jasmine rice, and a light soy-ginger seasoning. It is colorful, easy to make, and perfect for a simple family meal with a tropical twist.


Ingredients

  • 1 pound chicken breast, cut into bite-size pieces
  • 1 cup pineapple, cut into chunks
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • Salt and pepper, to taste
  • 1/4 cup sliced green onions
  • 1 tablespoon sesame seeds


Instructions

  1. Warm the olive oil in a large skillet over medium heat. Add the chicken and cook until it is browned and cooked through, then transfer it to a plate.
  2. In the same skillet, cook the onion, garlic, and red bell pepper until they soften and become fragrant.
  3. Add the pineapple chunks and let them cook for about 2 minutes so they start to release their juices.
  4. Stir in the jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper. Bring the mixture to a boil, then lower the heat, cover, and simmer for 18 to 20 minutes, or until the rice is tender.
  5. Return the cooked chicken to the skillet and stir everything together until heated through and well combined.
  6. Finish with green onions and sesame seeds, then serve warm.
