Get ready for the ultimate summer snack! If you’ve been around here for a bit, you know I’m all about yogurt bark – it’s quick, full of protein, and oh-so-refreshing on those hot days because it’s nice and cold!

For this tasty version, I’ve jazzed it up with the new @lesserevilsnacks x RIND Piña Colada popcorn, and let me tell you, it’s a game-changer! This popcorn is coated in coconut oil and features hints of pineapple and coconut fruit powders from RIND, along with a sprinkle of Himalayan pink salt – talk about deliciousness!

Ingredients

  • 2 cups Greek yogurt
  • 1 cup fresh pineapple
  • 1 teaspoon vanilla extract
  • 1/4 cup maple syrup
  • 1/4 teaspoon turmeric (optional, for color)

For the toppings:

  • 1/3 cup unsweetened shredded coconut
  • 1 cup @lesserevilsnacks x RIND Piña Colada popcorn


Instructions

  1. Here’s how to whip it up: In a food processor, blend together the yogurt, pineapple, vanilla, and maple syrup until smooth.
  2. Pour the mixture onto a lined baking sheet (I used a 1/4 sheet pan), then sprinkle on the popcorn and coconut.
  3. Pop it in the freezer for at least 3 hours until it’s solid.
  4. Once it’s frozen, break it into pieces and enjoy! Keep any leftovers stored in the freezer, and grab a piece whenever you need a refreshing snack!
