Here’s an easy and delightful recipe for homemade chocolate peppermint patties using simple, good-for-you ingredients. These treats are perfect for the holidays, and you can make a bunch to keep in the freezer for whenever your sweet tooth strikes!
Peppermint Patties
Servings 36
Ingredients
- 2 cups raw unsalted cashews or almonds
- 1 cup unsweetened coconut flakes
- 1/4 cup melted coconut oil
- 1/4 cup agave or honey
- 1 tablespoon peppermint extract
- 1/4 teaspoon kosher salt
- 10 oz semisweet or dark chocolate + 1 tablespoon coconut oil
- 2 candy canes crushed
Instructions
- Start by finely grinding 2 cups of raw, unsalted cashews or almonds in a food processor.
- Add in the coconut, melted coconut oil, agave (or honey), peppermint extract, and salt. Blend until a soft dough forms.
- Transfer the dough onto parchment paper and press it into a flat rectangle. Use a rolling pin to flatten it to about 1/4 inch thick. Freeze for 15 minutes until firm.
- Remove the dough from the freezer and use a 2-inch circular cookie cutter to cut round patties. If you don’t have a cookie cutter, you can simply slice the dough into squares. Spread the patties on a baking sheet and return to the freezer for 15 minutes.
- While the patties are chilling, melt 10 oz of semisweet or dark chocolate with 1 tablespoon of coconut oil in a microwave-safe bowl, stirring every 30 seconds.
- Take the patties out of the freezer and dip each one into the melted chocolate. Place them on parchment paper and top with crushed candy canes. If the chocolate hardens too quickly, drizzle a little more on top before adding the candy canes.
- Return the chocolate-covered patties to the freezer and freeze until fully set. Store your delicious treats in an airtight container in the fridge or freezer.
