Peanut Chicken Lettuce Wraps

Ingredients
- 1/4 cup low sodium soy sauce or coconut aminos
- 1/2 cup creamy peanut butter
- Juice of 1 lime
- 2 teaspoons chili garlic paste add more if you like it spicy
- 1 tablespoon coconut sugar
- 2 teaspoons ground ginger
- 1/4 cup water to thin the sauce as needed
- 2 tablespoons avocado oil
- 1.5 pounds ground chicken thigh meat works great, but breast meat is fine too
- 4 cloves garlic minced
- 1/2 cup salted peanuts crushed
- 3 green onions sliced
- 2 heads butter lettuce
- Juice of 1 lime
- Fresh cilantro optional
Instructions
- To make it, start by whisking together all of the sauce ingredients in a bowl and set it aside. Then, heat up the oil in a large pan over medium heat. Once it’s hot, add the ground chicken and cook it until it’s nearly done—don’t worry if there’s still a bit of pink, that’s okay! This should take about 4 minutes. Next, toss in the minced garlic, sliced green onions, and crushed peanuts, and cook for another 3-4 minutes, stirring occasionally. Pour in about 3/4 of the sauce and mix everything together until the chicken is nicely coated. Let it cook for a few more minutes, then take it off the heat and squeeze in the lime juice. Now, all that’s left to do is fill up those lettuce cups with the chicken mixture, drizzle the remaining sauce on top, sprinkle on some fresh cilantro if you like, and dig in! Enjoy!
