- 1 cup rolled oats (quick-cooking oats work too)
- 1 tablespoon chia seeds
- 2 fresh peaches (pitted and diced)
- ½ cup full-fat plain Greek yogurt
- 1 cup oat milk (any kind of milk works)
- ¼ cup heavy cream (or more oat milk)
- 1.5 teaspoons vanilla extract
- 2 tablespoons honey
Optional Toppings:
- Whipped cream
- Diced peaches
Instructions
- In a large mixing bowl, combine all the ingredients until well mixed.
- Cover the bowl and refrigerate for at least 2 hours or overnight.
- When ready to serve, enjoy the overnight oats as is for a thick consistency, or add ¼ cup of oat milk for a thinner texture. Top with whipped cream and extra peaches if desired.
Notes
- If your overnight oats are too thick in the morning, simply add a splash more milk to reach your desired consistency.
- Store the prepared oats in an airtight container in the refrigerator for up to 5 days, making them a convenient option for meal prep.
