These Oreo Peanut Butter Cookie Bars are a perfect mix of creamy peanut butter and crunchy Oreos. They’re easy to make, ideal for any occasion, and sure to satisfy your chocolate and peanut butter cravings. Whether you’re a peanut butter lover, an Oreo fan, or just love baking, these cookie bars will quickly become a household favorite.

Recipe Notes for Perfect Oreo Peanut Butter Cookie Bars:

  • Creamy Peanut Butter: Use creamy peanut butter for this recipe. Chunky peanut butter won’t give you the same melt-in-your-mouth texture.
  • Cook Time: We bake these for about 25 minutes for a soft, chewy texture. If you prefer them more done, bake a little longer.
  • Metal Pan: Metal pans conduct heat better than glass pans, so the baking time is shorter. Metal pans also give you perfectly chewy, crisp edges. If using a glass pan, increase the bake time.

Ingredients

  • – 1 cup salted butter room temperature
  • – 1 cup creamy peanut butter
  • – 1 cup granulated sugar
  • – 1 cup packed dark brown sugar
  • – 2 eggs
  • – 2 teaspoons pure vanilla extract
  • – 2 cups all-purpose flour
  • – 1 teaspoon Diamond kosher salt ½ teaspoon if using Morton
  • – About 16 Oreos

Instructions

  • Preheat your oven to 350°F. Spray a 9×13-inch baking pan with cooking spray or line it with parchment paper.
  • In a stand mixer or with a hand mixer on medium speed, cream the butter, peanut butter, and sugars for 2 minutes until fluffy.
  • Add the eggs and vanilla extract, and mix on medium speed for 1 more minute.
  • Add the flour and salt, and mix on low speed until just combined, about 20 seconds.
  • Pour the batter into the prepared pan and smooth it into an even layer with a spatula.
  • Break some of the Oreos into halves and leave some whole. Place the Oreos on top of the batter, pressing them in slightly.
  • Bake for 25-30 minutes until the center is set but still soft (for a 9×13-inch metal pan; if using a glass or smaller pan, increase the bake time).
  • Let the bars cool for about 1 hour before cutting. Enjoy!
