Ingredients

  • – 1 cup salted butter (room temperature)
  • – 1 cup creamy peanut butter
  • – 1 cup granulated sugar
  • – 1 cup packed dark brown sugar
  • – 2 eggs
  • – 2 teaspoons pure vanilla extract
  • – 2 cups all-purpose flour
  • – 1 teaspoon Diamond kosher salt (½ teaspoon if using Morton)
  • – About 16 Oreos


Instructions

  1. Preheat your oven to 350°F. Spray a 9×13-inch baking pan with cooking spray or line it with parchment paper.
  2. In a stand mixer or with a hand mixer on medium speed, cream the butter, peanut butter, and sugars for 2 minutes until fluffy.
  3. Add the eggs and vanilla extract, and mix on medium speed for 1 more minute.
  4. Add the flour and salt, and mix on low speed until just combined, about 20 seconds.
  5. Pour the batter into the prepared pan and smooth it into an even layer with a spatula.
  6. Break some of the Oreos into halves and leave some whole. Place the Oreos on top of the batter, pressing them in slightly.
  7. Bake for 25-30 minutes until the center is set but still soft (for a 9×13-inch metal pan; if using a glass or smaller pan, increase the bake time).
  8. Let the bars cool for about 1 hour before cutting. Enjoy!
