Oreo Peanut Butter Cookie Bars

Ingredients
- – 1 cup salted butter room temperature
- – 1 cup creamy peanut butter
- – 1 cup granulated sugar
- – 1 cup packed dark brown sugar
- – 2 eggs
- – 2 teaspoons pure vanilla extract
- – 2 cups all-purpose flour
- – 1 teaspoon Diamond kosher salt ½ teaspoon if using Morton
- – About 16 Oreos
Instructions
- Preheat your oven to 350°F. Spray a 9×13-inch baking pan with cooking spray or line it with parchment paper.
- In a stand mixer or with a hand mixer on medium speed, cream the butter, peanut butter, and sugars for 2 minutes until fluffy.
- Add the eggs and vanilla extract, and mix on medium speed for 1 more minute.
- Add the flour and salt, and mix on low speed until just combined, about 20 seconds.
- Pour the batter into the prepared pan and smooth it into an even layer with a spatula.
- Break some of the Oreos into halves and leave some whole. Place the Oreos on top of the batter, pressing them in slightly.
- Bake for 25-30 minutes until the center is set but still soft (for a 9×13-inch metal pan; if using a glass or smaller pan, increase the bake time).
- Let the bars cool for about 1 hour before cutting. Enjoy!
