Oreo Funfetti Icebox Cake

Ingredients

  • 3 cups heavy cream (chilled)
  • 1/2 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/2 cup rainbow sprinkles (plus extra for decorating)
  • 52 Golden Oreos


Instructions

  1. Step 1: Using a hand mixer in a large bowl (or a stand mixer with the whisk attachment), whip the heavy cream, powdered sugar, and vanilla until stiff peaks form. Gently fold in the sprinkles.
  2. Step 2: Start by spreading a very thin layer of whipped cream on the bottom of an 8-inch springform pan, then layer it evenly with whole Oreos. (You’ll need about 13 cookies for each layer.) Spread more whipped cream on top of the cookies and repeat the layering process until you have four layers of cookies.
  3. Step 3: Add a final layer of whipped cream on top, then cover the cake’s surface with sprinkles. If you have any whipped cream left, transfer it to a piping bag with a large star tip for decoration. Refrigerate both the cake and whipped cream until the cookies have softened, at least 4 hours or overnight.
  4. Step 4: When it’s time to serve, pipe additional whipped cream on top for a finishing touch.
