One Pot Parmesan Pasta

Ingredients

  • 4 cups low-sodium chicken stock
  • 12 oz spaghetti noodles
  • 1 small onion thinly sliced
  • 14.5 oz can of Rotel or petite diced tomatoes
  • 1 cup fresh basil
  • 3 cloves garlic minced
  • Juice and zest of one lemon
  • 3 tbsp olive oil
  • 1/2 tbsp sea salt
  • 1 tsp fresh ground black pepper
  • 1/4 cup heavy cream
  • 1 cup shredded parmesan cheese
  • Extra basil for garnish

Instructions

  • Grab a deep skillet or a heavy-bottom pot. Toss in the pasta, tomatoes, onions, basil, garlic, lemon juice, and zest.
  • Drizzle the olive oil, add salt and pepper.
  • Pour in the chicken stock and give everything a good stir.
  • Crank up the heat to medium-high and bring it to a boil. Cover and let it cook for 8-10 minutes. Remember to stir halfway through to keep the pasta from sticking together. Cover and cook for an additional 2-3 minutes or until the pasta is just right.
  • Stir in the heavy cream and parmesan cheese. Let it sit for a few minutes, allowing the sauce to thicken up.
