One Pot Parmesan Pasta

Ingredients
- 4 cups low-sodium chicken stock
- 12 oz spaghetti noodles
- 1 small onion thinly sliced
- 14.5 oz can of Rotel or petite diced tomatoes
- 1 cup fresh basil
- 3 cloves garlic minced
- Juice and zest of one lemon
- 3 tbsp olive oil
- 1/2 tbsp sea salt
- 1 tsp fresh ground black pepper
- 1/4 cup heavy cream
- 1 cup shredded parmesan cheese
- Extra basil for garnish
Instructions
- Grab a deep skillet or a heavy-bottom pot. Toss in the pasta, tomatoes, onions, basil, garlic, lemon juice, and zest.
- Drizzle the olive oil, add salt and pepper.
- Pour in the chicken stock and give everything a good stir.
- Crank up the heat to medium-high and bring it to a boil. Cover and let it cook for 8-10 minutes. Remember to stir halfway through to keep the pasta from sticking together. Cover and cook for an additional 2-3 minutes or until the pasta is just right.
- Stir in the heavy cream and parmesan cheese. Let it sit for a few minutes, allowing the sauce to thicken up.
