One Pan Mixed Berry Protein Baked Oatmeal
Ingredients
- 3 ripe bananas
- 2 cups of rolled oats
- 1/4 cup of chia seeds
- 1 teaspoon of cinnamon
- 1 cup of milk of your choice I prefer almond milk
- 1 cup of egg whites *if you’re vegan, skip the egg whites and use 2 cups of milk instead!
- 1/2 teaspoon of almond extract optional, but highly recommended
- 2 to 2 1/2 cups of mixed frozen berries
Instructions
- Preheat your oven to 350 degrees F and generously spray a 9×13 baking dish with cooking spray.
- Start by mashing the bananas well, then add in the oats, chia seeds, cinnamon, milk, egg whites, and almond extract.
- Give it a good stir, then sprinkle the frozen berries on top. Pop it in the oven and bake for 30-35 minutes, or until the liquid is absorbed.
- Once it’s done, take it out, serve with yogurt, and dig in! Enjoy every spoonful of this delightful dish!
