One Pan Mixed Berry Protein Baked Oatmeal

Ingredients

  • 3 ripe bananas
  • 2 cups of rolled oats
  • 1/4 cup of chia seeds
  • 1 teaspoon of cinnamon
  • 1 cup of milk of your choice (I prefer almond milk)
  • 1 cup of egg whites (*if you’re vegan, skip the egg whites and use 2 cups of milk instead!)
  • 1/2 teaspoon of almond extract (optional, but highly recommended)
  • 2 to 2 1/2 cups of mixed frozen berries


Instructions

  1. Preheat your oven to 350 degrees F and generously spray a 9×13 baking dish with cooking spray.
  2. Start by mashing the bananas well, then add in the oats, chia seeds, cinnamon, milk, egg whites, and almond extract.
  3. Give it a good stir, then sprinkle the frozen berries on top. Pop it in the oven and bake for 30-35 minutes, or until the liquid is absorbed.
  4. Once it’s done, take it out, serve with yogurt, and dig in! Enjoy every spoonful of this delightful dish!
