One Pan Greek Chicken and Lemon Rice

Ingredients
- 5 chicken thighs breasts, or drumsticks (skin-on)
- 1 lemon zested and juiced
- 1 medium onion
- 4 cloves garlic
- 2 tablespoons dried oregano
- 1 teaspoon paprika
- 1 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons olive oil
- 1 cup basmati rice
- 2 cups chicken broth
- 1/2 cup chopped parsley
Instructions
- Preheat your oven to 350°F.
- Season the chicken with oregano, paprika, salt, pepper, and lemon zest.
- Heat olive oil in a skillet and cook the chicken until crispy on both sides.
- Remove the chicken and set aside.
- Sauté onion and garlic in the skillet.
- Add rice, broth, lemon juice, oregano, parsley, salt, and pepper to the skillet.
- Simmer, then place the chicken on top.
- Cover and bake for 35 minutes.
- Fluff the rice with a fork and serve immediately. Enjoy your delicious meal!
