No bake Twix Cheesecake
This cheesecake is pure indulgence—a buttery shortbread crust, creamy cheesecake center, gooey caramel, and silky chocolate ganache. And the best part? It’s super easy to make! (I used all dairy-free ingredients)
Ingredients
Base:
- 2 ½ cups shortbread cookies
- 7 tbsp unsalted butter melted
Filling:
- 2 cups cream cheese
- 1 cup heavy cream
- ¾ cup powdered sugar
Caramel:
- ⅔ cup smooth nut butter
- ¼ cup maple syrup
- 2 tbsp melted coconut oil
Ganache:
- 3 ½ oz dark chocolate
- ⅓ cup heavy cream
Instructions
- Crush the cookies into fine crumbs, then mix with the melted butter. Press this mixture into the bottom of a lined 8-inch springform pan and chill in the fridge.
- In a stand mixer, whip the heavy cream until firm peaks form, then add the cream cheese and powdered sugar. Mix until smooth and spread over the crust. Refrigerate overnight to set.
- For the caramel, combine all ingredients and mix well. Spread the caramel over the cheesecake layer.
- Make the ganache by melting the chocolate with the cream, then spread it over the caramel layer.
- Pop the cheesecake back in the fridge to set, then slice and enjoy!
