No Bake Cookie Dough Bites

Ingredients

**For the Cookie Dough:**

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter softened
  • ¼ cup granulated sugar
  • ½ cup light brown sugar packed
  • ½ teaspoon salt
  • 1 tablespoon vanilla extract
  • 3 tablespoons whole milk
  • ½ cup mini semi-sweet chocolate chips

**For the Chocolate Dip:**

  • 1 cup mini semi-sweet chocolate chips
  • 1 teaspoon coconut oil

Instructions

**For the Cookie Dough:**

  • **Prepare the Flour:** Preheat your oven to 350°F. Spread the flour on a baking sheet lined with parchment paper. Bake for 10 minutes to kill any bacteria. Let it cool completely.
  • **Mix the Dough:** In a large bowl, cream together the softened butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy. Mix in the vanilla extract.
  • **Add Dry Ingredients:** Add the salt and the cooled flour to the butter mixture, mixing until combined.
  • **Incorporate Milk:** Gradually mix in the milk until the dough comes together.
  • **Add Chocolate Chips:** Fold in the mini chocolate chips with a rubber spatula.
  • **Form the Bites:** Use a small, 1-tablespoon cookie scoop to portion the dough. Roll each portion into a ball and place on a parchment-lined baking sheet. Chill the dough balls in the fridge for 15 minutes.

**For the Chocolate Dip:**

  • **Melt Chocolate:** In a double boiler, melt the chocolate chips with the coconut oil until smooth.
  • **Dip the Bites:** Dip each chilled cookie dough ball into the melted chocolate and place back on the parchment-lined baking sheet. (Alternatively, you can drizzle the chocolate over the bites.)
  • **Set the Chocolate:** Chill the cookie dough balls in the fridge for about 10 minutes, or until the chocolate is set.
