Instructions
- In a large mixing bowl, combine maple syrup, almond butter, cinnamon, ground ginger, and nutmeg. Mix until fully combined.
- Add oat flour and carrots, mixing until well incorporated.

- Melt white chocolate with coconut oil in the microwave in 30-second intervals, stirring well between each session.
- Dip and coat the balls in white chocolate, then place them back on the lined baking sheet. Freeze for 1-3 minutes, then drizzle with more white chocolate and add walnuts and cinnamon for toppings.
- Return to the freezer for 15 minutes to firm up completely before enjoying.
Notes
- Opt for smooth and creamy all-natural almond butter without palm oil for best results.
- Freshly grated carrots offer better flavor and texture. Use a cheese grater or microplane.
- Store these bites in the fridge for a quick grab-and-go snack or dessert. They can also be frozen; just thaw on the counter for 10 minutes before enjoying.
