In a large mixing bowl, combine maple syrup, almond butter, cinnamon, ground ginger, and nutmeg. Mix until fully combined.
Add oat flour and carrots, mixing until well incorporated.
Use a cookie scoop or tablespoon to roll the dough into balls. Place them on a lined baking sheet and freeze while you melt the white chocolate.
Melt white chocolate with coconut oil in the microwave in 30-second intervals, stirring well between each session.
Dip and coat the balls in white chocolate, then place them back on the lined baking sheet. Freeze for 1-3 minutes, then drizzle with more white chocolate and add walnuts and cinnamon for toppings.
Return to the freezer for 15 minutes to firm up completely before enjoying.
