No Bake Carrot Cake Bites

Ingredients

No Bake Bites:

  • 1/2 cup creamy all-natural almond butter or any nut or seed butter
  • 1/4 cup maple syrup or honey, agave, or date syrup
  • 1 1/4 cups oat flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 cup shredded carrots use a cheese grater or microplane
  • 1/2 cup white chocolate chips melted with 1 tablespoon coconut oil

Other Additions:

  • Walnuts
  • Raisins
  • Cinnamon
  • Ground ginger

Instructions

  • In a large mixing bowl, combine maple syrup, almond butter, cinnamon, ground ginger, and nutmeg. Mix until fully combined.
  • Add oat flour and carrots, mixing until well incorporated.
  • Use a cookie scoop or tablespoon to roll the dough into balls. Place them on a lined baking sheet and freeze while you melt the white chocolate.
  • Melt white chocolate with coconut oil in the microwave in 30-second intervals, stirring well between each session.
  • Dip and coat the balls in white chocolate, then place them back on the lined baking sheet. Freeze for 1-3 minutes, then drizzle with more white chocolate and add walnuts and cinnamon for toppings.
  • Return to the freezer for 15 minutes to firm up completely before enjoying.

Notes

  • Opt for smooth and creamy all-natural almond butter without palm oil for best results.
  • Freshly grated carrots offer better flavor and texture. Use a cheese grater or microplane.
  • Store these bites in the fridge for a quick grab-and-go snack or dessert. They can also be frozen; just thaw on the counter for 10 minutes before enjoying.
