No-Bake Biscoff Truffles

Ingredients
- 1 package about 32 cookies Biscoff cookies
- 5 ounces cream cheese softened
- 1/4 cup cookie butter
- 2 cups white chocolate
- 1/4 cup Biscoff cookie crumbs for topping
Instructions
- – Crush the Biscoff cookies finely in a food processor. If you don’t have one, just put the cookies in a ziplock bag and use a rolling pin to crush them.
- – In a mixing bowl, combine the softened cream cheese, cookie butter, and crushed Biscoff cookies until you have a dough-like consistency.
- – Roll about 2 tablespoons of the dough into balls and repeat with the remaining dough.
- – Chill the truffle balls in the fridge or freezer for 15 to 30 minutes until they firm up.
- – Melt the white chocolate in the microwave in 30-second intervals on 50% power, stirring in between until smooth.
- – Dip each truffle into the melted chocolate until fully covered, letting any excess drip off using a fork. Sprinkle Biscoff cookie crumbs on top if desired.
- – Chill the truffles in the fridge or freezer for a few minutes until the chocolate hardens.
- – Once set, they’re ready to enjoy! Store any leftovers in the fridge.
Notes
For a less sweet option, you can use milk or semi-sweet chocolate instead of white chocolate.
