M&M Ice Cream Cookie Sandwiches

Ingredients
#### For the cookies:
- 1 ¼ cups melted salted butter
- 1 cup light brown sugar
- 1 cup granulated sugar
- 2 tsp vanilla extract
- 2 eggs at room temperature
- 3 cups all-purpose flour
- 2 tsp cornstarch
- 1 tsp baking soda
- 1 tsp salt
- 1 cup M&Ms
- ¾ cup milk chocolate chips
#### For assembly:
- ½ gallon vanilla ice cream
- 1 cup mini M&Ms
- 1 cup mini chocolate chips
Instructions
#### For the cookies:
- In a stand mixer, combine melted butter, brown sugar, granulated sugar, and vanilla. Mix on low until combined.
- Add eggs one at a time, followed by the dry ingredients, while the mixer is on low.
- Use a rubber spatula to fold in M&Ms and chocolate chips. Cover the bowl with clear wrap and chill in the refrigerator for 30 minutes.
- Preheat the oven to 350°F and line a cookie sheet with parchment paper.
- After chilling, use a large cookie scoop (about 2 1/2-3 tablespoons of dough per cookie) and place onto the cookie pan, spacing about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are just set.
- As soon as the cookies come out, use a round cookie cutter or glass to gently reshape them into a circular shape.
- Let cool for 4 minutes on the baking sheet before transferring to a cooling rack. Place cookies in the freezer for 15 minutes to chill.
#### For assembly:
- Place a chilled cookie upside down and scoop vanilla ice cream on top. Gently spread to the edges and place another cookie on top.
- Avoid pressing too hard to prevent cracking, but ensure the sandwich is compact.
- Roll the sides into mini chocolate chips, M&Ms, or sprinkles.
- Wrap tightly with plastic wrap and place in the freezer. Repeat until all cookie sandwiches are made.
