Ingredients

  • 1 package of puff pastry (2 sheets, thawed)
  • 8 tbsp honey
  • 4 tbsp coconut sugar (divided)
  • 8 pineapple rings


Instructions

  1. Thaw the puff pastry sheets according to the package instructions. Preheat the oven to 375°F.
  2. Using a cookie cutter or the top of a small bowl, cut out 4 circles from the puff pastry. These circles should be slightly larger than the pineapple rings.
  3. Line a baking sheet with parchment paper. Spread honey evenly over the parchment paper, then sprinkle 2 tablespoons of coconut sugar over the honey. Arrange the pineapple rings on top.
  4. Place a puff pastry circle over each pineapple ring, gently pressing the pastry to adhere to the fruit.
  5. Optionally, spray with non-stick spray or brush with an egg wash for a golden finish. Bake for 20-25 minutes until golden brown.
  6. Once baked, carefully flip the treats over and sprinkle with powdered sugar if desired. Enjoy!

  • Opt for pre-made puff pastry for convenience, found in the freezer section of most grocery stores.
  • Feel free to experiment with various fresh fruits like pineapple, peaches, pears, or apples.
  • After baking, use a spatula to flip the treats right side up.
