Ingredients

  • 1 roll of refrigerated pie crust
  • 1.5 cups of chopped pecans
  • 2 tablespoons of melted grass-fed butter
  • 1/2 cup of coconut sugar
  • 1 tablespoon of ground cinnamon
  • 2 eggs
  • 2 teaspoons of vanilla extract
  • 1/4 cup of pure maple syrup


Instructions

  1. Preheat your oven to 400°F.
  2. Start by preparing the filling: In a large bowl, whisk together the melted butter, coconut sugar, cinnamon, vanilla extract, eggs, and maple syrup. Then, fold in the chopped pecans and set aside.
  3. Roll out the pie dough on a floured surface and use a circle cookie cutter or the top of a glass to cut out circles. Place each circle into a muffin tin, pressing the dough to fit the edges.
  4. Spoon about 1 tablespoon of filling into each pie crust and bake for 18-20 minutes.
  5. Once baked, let the pies cool in the muffin tins for 15 minutes before removing and indulging in these delightful treats.

Notes

  • Store-bought pie dough makes this recipe quick and easy.
  • Feel free to use homemade pie crust if you prefer.
  • Combine the wet ingredients before adding the pecans for a smoother filling.
