Mini Pecan Pies

Ingredients
- 1 roll of refrigerated pie crust
- 1.5 cups of chopped pecans
- 2 tablespoons of melted grass-fed butter
- 1/2 cup of coconut sugar
- 1 tablespoon of ground cinnamon
- 2 eggs
- 2 teaspoons of vanilla extract
- 1/4 cup of pure maple syrup
Instructions
- Preheat your oven to 400°F.
- Start by preparing the filling: In a large bowl, whisk together the melted butter, coconut sugar, cinnamon, vanilla extract, eggs, and maple syrup. Then, fold in the chopped pecans and set aside.
- Roll out the pie dough on a floured surface and use a circle cookie cutter or the top of a glass to cut out circles. Place each circle into a muffin tin, pressing the dough to fit the edges.
- Spoon about 1 tablespoon of filling into each pie crust and bake for 18-20 minutes.
- Once baked, let the pies cool in the muffin tins for 15 minutes before removing and indulging in these delightful treats.
Notes
- Store-bought pie dough makes this recipe quick and easy.
- Feel free to use homemade pie crust if you prefer.
- Combine the wet ingredients before adding the pecans for a smoother filling.
