**For the Mini Apple Pies:**

  • 2 pie crusts (store-bought or homemade)
  • 2 ½ cups apples (peeled and diced into ½-inch pieces (about 2 large apples))
  • 2 tablespoons unsalted butter
  • ¼ cup packed brown sugar
  • 2 tablespoons granulated white sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground allspice
  • ¼ teaspoon ground ginger

**For the Egg Wash & Sugar Topping:**

  • 1 egg (beaten)
  • ¼ cup granulated white sugar
  • ¼ teaspoon ground cinnamon
  • â…› teaspoon ground nutmeg
  • â…› teaspoon ground allspice
  • â…› teaspoon ground ginger
  • A tiny pinch of ground cloves
  • Turbinado sugar (for sprinkling)


Instructions

**For the Mini Apple Pies:**

  1. Line two baking sheets with parchment paper.
  2. In a small saucepan, cook the diced apples, butter, brown sugar, white sugar, vanilla, and spices over medium heat until the apples are tender. Let the filling cool completely.
  3. Roll out the pie crusts on a floured surface and cut out 20 mini apple shapes using a 4-inch apple cookie cutter. Re-roll the scraps to get all 20 shapes.
  4. Transfer 10 apple shapes to each prepared baking sheet.
  5. Spoon a heaping tablespoon of apple filling onto the center of 10 apple shapes.
  6. Brush the edges of the filled shapes with egg wash, then place another apple shape on top of each. Press the edges together with a fork and make small slits on the top of each pie. Chill for 20 minutes.

**Baking The Mini Apple Pies:**

  1. Preheat the oven to 400°F.
  2. Combine granulated sugar and spices in a small bowl.
  3. Brush the tops of the chilled pies with egg wash, sprinkle with spiced sugar, and a bit of turbinado sugar.
  4. Bake for 16-19 minutes until lightly golden brown. Let them cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
