  • spinach or your favorite greens

  • Burrito-sized tortilla


Instructions

  1. Preheat your oven to 350 degrees.
  2. In a bowl, mix together 3 eggs and 1/3 cup of cottage cheese.
  3. Add tomatoes, peppers, spinach (or your favorite greens), cheese, salt, and pepper to the mixture.
  4. Pour the mixture onto a burrito-sized tortilla.
  5. Bake in the preheated oven for 15-20 minutes or until the eggs are set.
