Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 4 boneless (skinless chicken breasts)
  • Kosher salt
  • Freshly ground black pepper
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon crushed red pepper flakes
  • 3/4 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup chopped sun-dried tomatoes
  • 1/4 cup freshly grated Parmesan
  • Fresh basil (torn, for serving)


Instructions

  1. Preheat your oven to 375°F. Heat 1 tablespoon of oil in a large oven-safe skillet over medium-high heat. Season the chicken generously with salt and pepper, then sear until golden on each side for about 5 minutes. Transfer the chicken to a plate.
  2. Lower the heat to medium and add the remaining 2 tablespoons of oil to the skillet. Stir in the garlic, thyme, and red pepper flakes, cooking until fragrant for about 1 minute. Add the broth, heavy cream, sun-dried tomatoes, Parmesan, and season with more salt if needed. Let it simmer, then return the chicken to the skillet.
  3. Transfer the skillet to the oven and bake until the chicken is fully cooked through, about 10 to 12 minutes.
  4. Garnish with torn basil and serve up your delicious “Marry Me” chicken!
