Lemon Parmesan Smashed Broccoli

Ingredients

  • 1 large crown of broccoli (washed)
  • 1/3 cup freshly grated Parmesan
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper


Instructions

  1. Start by boiling a large pot of water on the stove. Add the broccoli and let it boil for about 4-5 minutes. Be careful not to overcook it, or it’ll become mushy.
  2. Once cooked, rinse the broccoli under cold water to stop the cooking process and set it aside.
  3. Preheat your oven to 400°F.
  4. While the oven heats up, whisk together olive oil, lemon juice, garlic powder, salt, and pepper to make the dressing.
  5. Line a baking sheet with parchment paper and place the broccoli on top. Break the broccoli into florets and spread them out evenly.
  6. Use the bottom of a glass to gently smash the broccoli until it’s flat.
  7. Brush the dressing over the broccoli florets and sprinkle Parmesan cheese on top.
  8. Bake in the oven for 20-22 minutes until the edges are crispy and the cheese is melted.
  9. Once done, serve and enjoy! Store any leftovers in the fridge for up to a week.
