Ingredients

  • 1 large crown of broccoli washed
  • 1/3 cup freshly grated Parmesan
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Instructions

  • Start by boiling a large pot of water on the stove. Add the broccoli and let it boil for about 4-5 minutes. Be careful not to overcook it, or it’ll become mushy.
  • Once cooked, rinse the broccoli under cold water to stop the cooking process and set it aside.
  • Preheat your oven to 400°F.
  • While the oven heats up, whisk together olive oil, lemon juice, garlic powder, salt, and pepper to make the dressing.
  • Line a baking sheet with parchment paper and place the broccoli on top. Break the broccoli into florets and spread them out evenly.
  • Use the bottom of a glass to gently smash the broccoli until it’s flat.
  • Brush the dressing over the broccoli florets and sprinkle Parmesan cheese on top.
  • Bake in the oven for 20-22 minutes until the edges are crispy and the cheese is melted.
