- 4 boneless, skinless chicken breasts
- 1 cup plain all-purpose flour
- 2 large eggs, lightly beaten
- 1 cup breadcrumbs (panko for extra crunch)
- ½ cup crumbled feta cheese
- ¼ cup hot honey (store-bought or homemade)
- Salt and freshly ground black pepper
- Olive oil (for frying)
Instructions
- Preheat the oven to 375°F (190°C). Lightly oil a baking dish or line it with foil.
- Pat the chicken dry and season both sides generously with salt and pepper.
- Set up a breading station: place flour in one shallow dish, beaten eggs in a second, and breadcrumbs in a third.
- Coat each breast by dredging first in the flour (shake off excess), then dipping into the egg, and finally pressing into the breadcrumbs so each piece is well covered.
- Warm enough olive oil in a large skillet over medium heat to coat the bottom. Fry the breaded chicken until each side is a deep golden brown — about 3–5 minutes per side depending on thickness. Do this in batches if your pan is small.
- Move the seared chicken to the prepared baking dish. Scatter the crumbled feta evenly over the tops of the breasts.
- Spoon or lightly drizzle the hot honey across each piece (use more or less to suit your spice/sweetness preference).
- Slide the dish into the oven and bake for 15–20 minutes, or until the chicken reaches 165°F internally and the feta has softened.
- Let the chicken rest for a few minutes before serving so the juices settle and the coating stays crisp.
