Healthy Vegan Snickers Protein Bars

Only 6 ingredients needed to make these healthier high-protein Snickers Bars! 🥜 A nougat-style base with a nutty, gooey caramel center and a creamy white chocolate topping.

Ingredients

For the Base:

  • ½ cup vegan vanilla protein powder
  • ¼ cup oat flour use gluten-free if needed
  • 6 tbsp smooth peanut butter
  • 4 tbsp maple syrup
  • 4 tbsp dairy-free milk

For the Filling:

  • ¾ cup peanut butter
  • ¼ cup maple syrup
  • 2 tbsp melted coconut oil

For the Topping:

  • 7 oz dairy-free white chocolate
  • 2 tbsp coconut oil

Instructions

Prepare the Base:

  • In a bowl, mix together the vegan protein powder and oat flour.
  • Gradually add in the peanut butter, maple syrup, and dairy-free milk until a dough forms.
  • Press the dough evenly into a lined loaf pan.

Make the Caramel Filling:

  • In a separate bowl, combine the peanut butter, maple syrup, and melted coconut oil until smooth.
  • Pour this caramel mixture over the base, and sprinkle with peanuts if desired.

Add the Topping:

  • Melt the dairy-free white chocolate with the coconut oil until smooth.
  • Pour the melted chocolate over the caramel layer.

Set the Bars:

  • Place the loaf pan in the fridge to set until firm.
