For the Butterbeer Cupcakes

  • 3 cups butterscotch beer (cream soda works too)
  • ½ cup unsalted butter (softened)
  • ½ cup light brown sugar (packed)
  • ¼ cup granulated white sugar
  • 2 eggs (at room temperature)
  • 2 teaspoons vanilla extract
  • 1 teaspoon butter extract
  • â…“ cup butterscotch chips (melted and slightly cooled)
  • ½ cup buttermilk (at room temperature)
  • 1 ¾ cups all-purpose flour (sifted)
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt

For the Butterscotch Buttercream

  • 1 ½ cups unsalted butter (softened)
  • 1 cup butterscotch chips (melted and slightly cooled)
  • 2 ¼ cups powdered sugar (sifted)
  • ¾ teaspoon butter extract
  • ½ teaspoon vanilla extract

For the Butterscotch Ganache Drizzle

  • ¼ cup butterscotch chips
  • 1 tablespoon heavy cream
  • ½ tablespoon honey


Instructions

For the Butterbeer Cupcakes

  1. Simmer the butterscotch beer or cream soda in a large pot over medium heat until it reduces to ½ cup. Let it cool until slightly warm.
  2. Preheat the oven to 350°F and line cupcake pans with liners.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  4. In a large bowl, cream the butter, brown sugar, and white sugar until fluffy. Add the eggs, vanilla extract, and butter extract, mixing until pale in color.
  5. Stir in the butterbeer reduction and melted butterscotch chips. Gradually add the dry ingredients and buttermilk, mixing until smooth.
  6. Divide the batter into cupcake liners and bake for 14-18 minutes. Let them cool completely.

For the Butterscotch Buttercream

  1. Whip the softened butter in a large bowl until pale and fluffy. Add the melted butterscotch chips and combine.
  2. Gradually add the powdered sugar, mixing until light and fluffy. Stir in the butter and vanilla extracts.

For the Butterscotch Ganache

  1. Combine the butterscotch chips and heavy cream in a microwave-safe bowl. Microwave until melted, then stir in the honey.

Assembling the Cupcakes
