Harry Potter Butterbeer Cupcakes

Ingredients

For the Butterbeer Cupcakes

  • 3 cups butterscotch beer cream soda works too
  • ½ cup unsalted butter softened
  • ½ cup light brown sugar packed
  • ¼ cup granulated white sugar
  • 2 eggs at room temperature
  • 2 teaspoons vanilla extract
  • 1 teaspoon butter extract
  • cup butterscotch chips melted and slightly cooled
  • ½ cup buttermilk at room temperature
  • 1 ¾ cups all-purpose flour sifted
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt

For the Butterscotch Buttercream

  • 1 ½ cups unsalted butter softened
  • 1 cup butterscotch chips melted and slightly cooled
  • 2 ¼ cups powdered sugar sifted
  • ¾ teaspoon butter extract
  • ½ teaspoon vanilla extract

For the Butterscotch Ganache Drizzle

  • ¼ cup butterscotch chips
  • 1 tablespoon heavy cream
  • ½ tablespoon honey

Instructions

For the Butterbeer Cupcakes

  • Simmer the butterscotch beer or cream soda in a large pot over medium heat until it reduces to ½ cup. Let it cool until slightly warm.
  • Preheat the oven to 350°F and line cupcake pans with liners.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large bowl, cream the butter, brown sugar, and white sugar until fluffy. Add the eggs, vanilla extract, and butter extract, mixing until pale in color.
  • Stir in the butterbeer reduction and melted butterscotch chips. Gradually add the dry ingredients and buttermilk, mixing until smooth.
  • Divide the batter into cupcake liners and bake for 14-18 minutes. Let them cool completely.

For the Butterscotch Buttercream

  • Whip the softened butter in a large bowl until pale and fluffy. Add the melted butterscotch chips and combine.
  • Gradually add the powdered sugar, mixing until light and fluffy. Stir in the butter and vanilla extracts.

For the Butterscotch Ganache

  • Combine the butterscotch chips and heavy cream in a microwave-safe bowl. Microwave until melted, then stir in the honey.

Assembling the Cupcakes

  • Pipe the butterscotch buttercream onto cooled cupcakes using a piping bag. Drizzle with butterscotch ganache. Enjoy the enchanting flavors of Hogsmeade in every bite!
