  • ½ teaspoon salt
  • ½ cup unsalted butter (softened (112 g))
  • ½ cup light brown sugar (packed (110 g))
  • ¼ cup granulated white sugar (50 g)
  • 2 eggs (at room temperature)
  • 2 teaspoons vanilla bean paste or extract
  • 1 teaspoon butter extract
  • â…“ cup butterscotch chips (melted and slightly cooled (66 g))
  • ½ cup buttermilk (at room temperature (120 ml))

For the Butterbeer Buttercream Frosting:

  • 1 cup unsalted butter (softened (224 g))
  • Pinch of salt
  • â…” cup butterscotch chips (melted and slightly cooled (133 g))
  • 1 ½ cups powdered sugar (195 g)
  • ½ teaspoon vanilla bean paste or extract
  • ½ teaspoon butter extract
  • Gold and white nonpareil sprinkles (optional)

For the Butterscotch Sauce:

  • ¼ cup butterscotch chips (50 g)
  • 1 ½ tablespoons heavy cream (22 ml)
  • ½ tablespoon honey


Instructions

For the Butterbeer Cake:

  1. Simmer the butterscotch beer in a large pot over medium heat until it reduces to ½ cup (120 ml), about 20-30 minutes. Let it cool slightly.
  2. Preheat the oven to 350°F and prepare a 9×9 inch baking pan.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Cream butter and sugars until fluffy, then add eggs, vanilla, butter extract, melted butterscotch chips, and butterscotch beer reduction.
  5. Mix in buttermilk and dry ingredients until smooth. Pour batter into the pan and bake for 27-31 minutes.
  6. Let the cake cool completely.

For the Butterbeer Buttercream Frosting:

  1. Whip butter and salt until pale and fluffy. Add melted butterscotch chips and mix.
  2. Sift in powdered sugar and mix until fluffy. Add vanilla and butter extract.

For the Butterscotch Sauce:

  1. Microwave butterscotch chips and heavy cream until melted, then mix in honey.

Decorating the Cake:

  1. Transfer the cooled cake to a serving plate and frost with butterbeer frosting.
